No-Bake Pies FAQ
What is a no-bake pie?
A no-bake pie is a chilled or frozen pie that doesn’t require turning on your oven. Usually no-bake pie recipes call for a premade or homemade graham cracker crust, or one made of crushed cookies, so there’s no complicated lattice pie crust work required. No-bake pies often have fillings that include some combination of instant pudding, frozen whipped topping, mousse, ice cream and sweetened condensed milk. While they’re quick to put together, they usually need to chill for a few hours or overnight, so make sure to plan accordingly.
How do I keep the pie crust from becoming soggy?
Most store-bought no-bake pie crusts, like a graham cracker crust, are solid shells that keep all your ingredients intact without making the pie soggy. You can also spread a layer of melted chocolate over a crumb crust to create a protective barrier between the filling and the crust. In general, however, no-bake pies still taste delicious after a few days in the fridge, even as the crust gets a bit soggier with each passing day as it absorbs the filling. No-bake pies are a bit like trifles, in that way!
Can I freeze a no-bake pie?
Plenty of our favorite no-bake pies can be stored in the freezer or are meant to finish in the freezer, like any kind of ice cream pie. However, different chilled pie fillings will freeze differently depending on what they’re made of. If the no-bake pie filling is mainly pudding-based or gelatin-filled, it will not freeze well and may become watery after defrosting. Chilled cream pies also tend not to freeze well because the dairy content causes texture changes. Check out our guide to baked goods that don’t freeze well for more information.
