Ingredients

  • 1/2 pound lean ground beef (90% lean)
  • 1 teaspoon all-purpose seasoning with garlic, onion, black pepper and sea salt
  • 3 cups shredded cheddar cheese
  • 15 dill pickle slices
  • 12 pickled jalapeno slices
  • 6 thin slices onion
  • Optional: Ketchup, prepared mustard and shredded lettuce

Directions

  1. In a small bowl, combine beef and all-purpose seasoning, mixing lightly but thoroughly. Shape into three 4-in. patties.
  2. Preheat miniature waffle maker. Lightly grease waffle plates. In batches, place 1/4 cup cheese on bottom plate. Top with 5 pickle slices and another 1/4 cup cheese. Close lid. Cook until golden brown, about 5 minutes. Transfer to a paper towel-lined baking sheet to cool completely. Repeat, using remaining pickle slices. Repeat 3 more times using 4 jalapeno slices and 2 onion slices in place of pickles.
  3. In batches, place burgers on waffle iron; close lid. Cook burgers until a thermometer reads 160°, about 3 minutes.
  4. Serve burgers with cheese crisps and optional toppings as desired.

  • 12 chicken tenderloins (about 1-1/2 pounds)
  • 12 bacon strips
  • 1/3 cup packed brown sugar
  • 1 tablespoon chili powder
  • WAFFLES:
  • 1 cup self-rising flour
  • 2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/4 teaspoon chili powder
  • 1 cup buttermilk
  • 1/4 cup packed brown sugar
  • 1/4 cup canned pumpkin
  • 2 teaspoons canola oil
  • 1 large egg
  • SRIRACHA SYRUP:
  • 1 cup maple syrup
  • 2 tablespoons butter
  • 2 to 4 teaspoons Sriracha chili sauce

Directions

  1. Preheat oven to 375°. In a small bowl, mix salt, onion powder and paprika; sprinkle over chicken tenders. Wrap each tender with a strip of bacon; tuck ends under. In another small bowl, mix brown sugar and chili powder. Roll each wrapped chicken tender in sugar mixture, pressing to adhere.
  2. Place a wire rack over a foil-lined baking sheet; place chicken on rack. Bake until chicken is cooked and bacon is crisp, 20-25 minutes.
  3. Preheat waffle maker. For waffles, in a large bowl, mix flour, pie spice, salt and chili powder. In a small bowl, combine buttermilk, brown sugar, pumpkin, oil and egg until blended. Add to dry mix; stir just until moistened. Bake waffles according to manufacturer’s directions until golden brown.
  4. Meanwhile, place Sriracha syrup ingredients in a small saucepan. Heat until butter is melted and sauce is heated through, stirring occasionally. Serve waffles with chicken and warmed syrup.

    This recipe from our Test Kitchen serves eight people, with about one piece of chicken and one waffle per person. Leftovers taste great any time of day.

    Ingredients

    Chicken:

    • 1-3/4 cups all-purpose flour
    • 1 tablespoon dried thyme
    • 1 tablespoon paprika
    • 2 teaspoons salt
    • 2 teaspoons garlic powder
    • 1 teaspoon pepper
    • 1 large egg
    • 1/3 cup 2% milk
    • 2 tablespoons lemon juice
    • 3 to 4 pound broiler/fryer chicken, cut up
    • Oil for deep-fat frying

    Waffles:

    • 2 cups all-purpose flour
    • 1 tablespoon sugar
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 3 large eggs, separated
    • 2 cups 2% milk
    • 1/4 cup canola oil
    • Maple syrup

    Directions

    Step 1: Prep the dry chicken breading

    In a shallow bowl, mix together the flour, thyme, paprika, salt, garlic powder, and pepper. Use a bowl that’s wide enough to fit the chicken when you dredge them in.

    Step 2: Whisk the egg mixture

    In a separate shallow bowl, whisk together the egg, milk and lemon juice until blended.

    Step 3: Dredge the chicken

    Dip each piece of chicken in the flour mixture to coat all sides; shake off excess. Dip the chicken in the egg mixture, then again in the flour mixture.     Step 4: Fry the chicken

    In an electric skillet or deep fryer, heat oil to 375°F. Fry the chicken, a few pieces at a time, until the skin is golden brown and juices run clear, 6 to 10 minutes on each side. One of the best tips for southern fried chicken? Don’t overfill the fryer, or the temperature of the oil will drop, resulting in a soggy coating.     Drain the cooked chicken on paper towels or a wire rack while the next batch cooks. Keep warm in a low oven.

    We like to use boneless chicken for fried chicken and waffles. That makes the chicken easy to eat with a knife and fork, along with the waffle. Boneless thighs are very juicy and tender, but you can also use wings or chicken strips.

    How do you know when fried chicken is done?

    In general, chicken is done if the juices run clear when pierced. To be extra certain, you should test the internal temperature of the thickest part of the chicken. Chicken is safe to eat when it reaches an internal temperature of 165°, though we prefer the taste and texture of dark meat cooked to 170-175°.
