Australian sausage rolls are absolutely delicious. They are stuffed with savory, well-spiced pork and made with warm, flaky puff pastry shells. They’re great for a to-go lunch or for serving as an appetizer for a dinner party or gathering. You can also easily tweak this recipe as desired by substituting the pork for another ground meat, experimenting with different spices and seasonings or adding (cooked) mushrooms or eggplant instead of meat. No matter how you choose to prepare these rolls, they’re bound to be a big hit.

Ingredients for Australian Sausage Rolls

  • Onion: We also like adding pan-fried leeks to these rolls in place of onion.
  • Seasonings: Here, we use a combination of chives, basil, garlic, salt, pepper and paprika to season Australian sausage rolls. You can also experiment with adding other herbs like rosemary, thyme or sage and other seasonings.
  • Pork sausage: Use premium-quality sausage from the farmers market or a butcher if you have access to these; the difference in flavor is worth it.
  • Frozen puff pastry: If you’re up for a culinary challenge, try making your own puff pastry from scratch (or simply use frozen if you’d rather).

Directions

On a lightly floured surface, roll each pastry sheet into an 11×10 1/2-inch rectangle. Cut each sheet lengthwise into three strips. Spread 1/2 cup of the sausage mixture lengthwise down the center of each strip. Fold the sides over the filling, pinching the edges to seal. Cut each log into six pieces.

Australian Sausage Roll Recipe Variations

  • Add some spice: Add a dao,,l0p-opsh of red pepper flakes with the rest of the seasonings if you want these rolls to be on the spicy side.
  • Swap out the sausage for other ground meats: Use turkey, chicken or lamb in place of the sausage if you prefer.
  • Make a vegetarian version: Instead of meat, try filling these rolls with sauteed mushrooms and farro, eggplant or spinach with feta.

I was born and raised in Australia, but moved to the U.S. when I got married. When I long for some Australian recipes, I bake up a batch of this sausage roll recipe and share them with neighbors or co-workers. —Melissa Landon, Port Charlotte, Florida
