Beef Taco Pie

This simple taco pie recipe needs just 20 minutes of prep time to make a tasty family-friendly meal that's ready in under an hour.

Ingredients

  • 1 pound ground beef
  • 1 large onion, chopped
  • 1/2 cup salsa
  • 2 tablespoons taco seasoning
  • 1/4 teaspoon pepper
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 1 cup 2% milk
  • 1/2 cup biscuit/baking mix
  • Optional toppings: Diced tomatoes, shredded lettuce, sour cream, cilantro or cubed avocado

Directions

  1. Preheat oven to 400°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; crumble beef; drain. Stir in the salsa, taco seasoning and pepper. Transfer to a greased 9-in. pie plate; sprinkle with cheese.
  2. In a large bowl, combine the eggs, milk and biscuit mix just until combined; pour over cheese. Bake until a knife inserted in the center comes out clean, 25-30 minutes. If desired, serve with optional toppings.
