In a large mixing bowl, combine 1-1/2 cups of the flour, the yeast, sugar and salt.

In a small saucepan, heat the milk, 1/4 cup of the water and the butter to 120° to 130°F. Add this wet mixture to the dry ingredients, and beat on medium speed until just moistened. Stir in enough of the remaining flour to form a stiff dough.

Place the dough on a lightly floured surface, and knead it until it’s smooth and elastic, six to eight minutes. Place the kneaded dough in a greased bowl, turning it once to grease the top. Cover the dough and let it rise in a warm place until it’s doubled, about 30 minutes.

Step 4: Form the breadsticks, let them rise again

Preheat the oven to 400°. Punch down the dough. Pinch off golf ball-sized pieces. On a lightly floured surface, shape each into a 6-inch rope. Place them on greased baking sheets 1 inch apart. Cover the dough and let it rise again for 15 minutes.
