Gorgeous in color and rich in flavor, this sophisticated take on traditional frosting will have you wanting to make blackberry buttercream for every cake you make.

Ingredients

  • 1 cup fresh blackberries
  • 2 cups unsalted butter, softened
  • 1 teaspoon vanilla extract
  • Dash salt
  • 7 cups confectioners' sugar

Directions

  1. Place blackberries in a blender; cover and process until pureed. Press through a fine mesh strainer into a bowl; discard seeds.
  2. In a large bowl, beat butter until creamy. Beat in vanilla and salt. Gradually beat in confectioners’ sugar until smooth. Add blackberry puree; beat until blended.
