Buckeyes

Total Time Prep: 30 min. + chilling
Yield 5-1/2 dozen
Buckeyes are an Ohio-born treat that need just five ingredients. The hardest part of this recipe will be saving any buckeyes for your loved ones.

Ingredients

  • 5-1/2 cups confectioners' sugar
  • 1-2/3 cups peanut butter
  • 1 cup butter, melted
  • 4 cups semisweet chocolate chips
  • 1 teaspoon shortening

Directions

  1. In a large bowl, beat the sugar, peanut butter and butter until smooth. Shape into 1-in. balls; refrigerate at least 20 minutes.
  2. Microwave chocolate chips and shortening on high until melted; stir until smooth. Insert toothpick into peanut butter ball. Holding toothpick, dip peanut butter ball three-quarters of the way in chocolate, allowing excess to drip off. Place on a waxed paper-lined baking sheet; remove toothpick. Repeat with remaining peanut butter balls. Refrigerate 15 minutes or until firm. Cover and store in the refrigerator.

These chocolate peanut butter balls (no bake!) are always popular at my church's annual Christmas fundraiser. They resemble chestnuts or buckeyes—hence the name. —Merry Kay Opitz, Elkhorn, Wisconsin
