Your next game day spread will be even more scrumptious than usual when you add this Buffalo chicken soup!
Ingredients
- 3 tablespoons butter
- 3 celery ribs, chopped
- 2 medium carrots, chopped
- 1/2 medium onion, chopped
- 2 tablespoons all-purpose flour
- 1 tablespoon ranch seasoning mix
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 3 cups reduced-sodium chicken broth
- 1 cup half-and-half cream
- 1/4 cup Buffalo wing sauce
- 1 pound cooked chicken breasts, shredded
- 4 ounces cream cheese, cubed and softened
- Optional: Crumbled blue cheese and celery leaves
Directions
- In a Dutch oven, melt butter over medium heat. Add celery, carrot and onion; cook until tender, 5-6 minutes. Stir in flour, ranch seasoning, salt and pepper until blended; gradually add broth, cream and wing sauce. Gently simmer until thickened; stirring occasionally, 8-10 minutes.
- Add chicken. Stir in cream cheese; heat until cheese is melted, 4-5 minutes. If desired, garnish with optional toppings.
