Ingredients
- 1 bunch fresh cilantro, chopped
- 1 garlic clove, minced
- 1/4 cup olive oil
- 3 pounds potatoes, peeled and cubed
- 1/2 teaspoon salt
Directions
- In a large cast-iron or other heavy skillet, cook cilantro and garlic in oil over medium heat for 1 minute. Add potatoes; cook and stir until tender and lightly browned, 20-25 minutes. Drain. Sprinkle with salt.
