Apple Pancakes

Light and fluffy apple pancakes with cinnamon are sweet enough to enjoy even without syrup. (But if you're a maple syrup lover, don't let us stop you!)

Ingredients

  • 2 cups whole wheat flour
  • 4 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs, room temperature
  • 2 cups fat-free milk
  • 2 tablespoons honey
  • 1 tablespoon canola oil
  • 1 medium apple, chopped

Directions

  1. In a bowl, whisk together first 4 ingredients. In another bowl, whisk together eggs, milk, honey and oil; add to dry ingredients, stirring just until moistened. Stir in apple.
  2. Preheat a lightly greased griddle over medium heat. Pour batter by 1/3 cupfuls onto griddle; turn when bubbles form on top. Cook until second side is golden brown.
