Almond Wild Rice: Omit the long grain rice, dried cherries and pecans. Add 1 cup uncooked brown rice with broth and wild rice. Bring to a boil. Reduce heat; cover and simmer for 45-50 minutes or until rice is tender and liquid is absorbed. Remove from the heat; stir in 1 cup toasted slivered almonds, 1/2 cup minced fresh parsley and 1/4 teaspoon each salt and pepper.

  • Sugared Cranberries

    Heat 3 tablespoons light corn syrup in microwave until warm; gently toss with 1 cup fresh or frozen cranberries, allowing excess syrup to drip off. Toss in 1/3 cup sugar to coat. Place on waxed paper; let stand until set, about 1 hour.

    Ingredients

    • 1 celery rib, thinly sliced
    • 1 large carrot, finely chopped
    • 1 small onion, finely chopped
    • 2 tablespoons butter
    • 5 cups chicken broth
    • 1 cup uncooked wild rice
    • 1 cup uncooked long grain rice
    • 2/3 cup dried cherries or cranberries
    • 1/2 cup chopped pecans, toasted

    Directions

    1. In a large saucepan, saute the celery, carrot and onion in butter until tender. Stir in broth and wild rice. Bring to a boil. Reduce heat; cover and simmer for 25 minutes.
    2. Add long grain rice; cover and simmer 20 minutes longer. Stir in cherries; cook until the liquid is absorbed, about 5 minutes longer. Just before serving, stir in pecans.
