Copycat Chipotle Corn Salsa

Ingredients

  • 1-1/2 cups fresh or thawed frozen corn
  • 1 teaspoon kosher salt
  • 1/4 cup chopped red onion
  • 1/2 jalapeno pepper, seeded and finely minced
  • 1 tablespoon minced fresh cilantro
  • 2 tablespoons lime juice

Directions

  1. In a small bowl, combine corn and salt. Let sit 10 minutes.
  2. Add red onion, jalapeno, cilantro and lime juice; stir to combine. Cover and refrigerate at least 1 hour.
