Ingredients
- 2-1/2 cups chicken broth
- 2 ounces cream cheese, cubed
- 1/2 teaspoon grated lemon zest
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon coarsely ground pepper
- 1 cup uncooked long grain rice
- 1/4 cup minced fresh basil
Directions
- In a saucepan, combine first six ingredients; bring to a boil. Stir with a whisk to blend.
- Stir in rice; return to a boil. Reduce heat; simmer, covered, until liquid is absorbed and rice is tender, about 15 minutes. Stir in basil.
