Ingredients

  • 1/2 cup packed light brown sugar
  • 3 tablespoons milk
  • 2 tablespoons light corn syrup
  • 2 teaspoons butter
  • 2 tablespoons creamy peanut butter
  • Vanilla ice cream
  • 1/4 cup peanuts

Directions

  1. In a small heavy saucepan, combine the brown sugar, milk, corn syrup and butter. Cook and stir over medium heat until sugar is dissolved and mixture is smooth, about 4 minutes.
  2. Remove from the heat; stir in peanut butter until smooth. Cool to room temperature. Spoon half into two parfait glasses; top with ice cream. Repeat layers. Sprinkle with peanuts.

Ingredients

  • 1 quart vanilla ice cream
  • 2 packages (3 ounces each) strawberry gelatin
  • 2 cups boiling water

Directions

  1. Spoon ice cream into a large bowl. Dissolve gelatin in water; pour over the ice cream and blend well. Pour into parfait glasses. Refrigerate until set, about 1-1/2 hours.
Editor's Note: An ungreased 11x7x2-in. pan may be used instead of the parfait glasses. Cut into squares to serve.

  • 1/2 cup chopped pecans
  • 1/2 cup sweetened shredded coconut
  • 1 package fudge brownie mix (8-inch square pan size)
  • 1 pint vanilla ice cream
  • 1 jar (12-1/4 ounces) caramel ice cream topping

Directions

  1. Place pecans and coconut in an ungreased baking pan. Bake at 350° for 10-12 minutes or until toasted, stirring frequently.
  2. Meanwhile, prepare brownie batter and bake according to package directions. Cool on a wire rack; cut into small squares.
  3. When ready to serve, in six parfait or dessert glasses, layer with brownies, ice cream, caramel topping and pecan mixture; repeat layers one or two times.

  • 6 tablespoons raspberry liqueur
  • 1-1/2 pints vanilla ice cream
  • 1-1/2 pints fresh raspberries
  • 2-1/4 cups chocolate wafer crumbs
  • Sweetened whipped cream

Directions

  1. Layer each of 6 parfait glasses with 1 teaspoon raspberry liqueur, 2-1/2 tablespoons ice cream, 4 or 5 raspberries and 2 tablespoons chocolate wafer crumbs. Repeat layers twice. Freeze. To serve, top with whipped cream and remaining raspberries.
