Erin French, chef and owner of The Lost Kitchen in Freedom, Maine and star of The Lost Kitchen on Magnolia Network, recently shared her father’s recipe for meat loaf with Ina Garten. This family recipe is legendary in Erin’s house, and she was excited to share the tradition with Ina.

There are a few interesting ingredients along the way that make this meat loaf an intriguing twist on the classic recipe—like shredded carrots, pecorino and fresh thyme.

How to Make Erin French’s Meat Loaf

Ingredients

Meat loaf:

  • 2 cups (1/2-inch-diced) bread cubes, such as crusty sourdough
  • 1/2 cup whole milk
  • 2 large eggs, lightly beaten
  • 3/4 cup grated carrots
  • 1/2 cup chopped shallots
  • 1/2 cup grated pecorino cheese
  • 1-1/2 pounds ground beef
  • 1-1/2 pounds ground pork
  • 2 tablespoons fresh thyme leaves
  • 2 teaspoons kosher salt
  • 6 to 8 twists of a pepper grinder

Glaze:

  • 3/4 cup ketchup
  • 1/2 cup packed light brown sugar
  • 1 tablespoon Dijon mustard

Directions

Step 1: Soak the bread

Preheat the oven to 375°F.

In a large bowl, add the bread cubes, whole milk and lightly beaten eggs. Mix to combine and allow to soak while you prepare the remaining meat loaf ingredients.

Step 2: Mix the meat loaf

To the bowl, add the grated carrots, chopped shallots, pecorino cheese, ground beef, ground pork, fresh thyme, salt and pepper. Mix with your hands until combined. Do not overmix! You don’t want the finished meat loaf to be tough.

Divide the mixture between two 9 x 5-inch loaf pans and set aside.

Step 3: Make the glaze

In a medium bowl, stir together the sugar, ketchup and mustard. Brush the top of each meat loaf with a thick coat of the glaze.

Step 4: Bake the meat loaf

Transfer to the oven and bake until an instant-read thermometer inserted in the middle registers 150°, about 45 minutes.

Step 5: Rest and serve

Let the meat loaves rest for 10 to 15 minutes, unmold from the pans, cut into slices and serve.

We can see why this meat loaf recipe has survived the test of time in Erin French’s family! It’s the perfect combination of a traditional homestyle meat loaf that we all know and love, along with a few surprising additions that make it stand out.

The cornerstone of Erin French’s meat loaf recipe is the addition of grated carrot to the mix. She says this was the signature ingredient of her dad’s recipe and what makes it so special. Erin suggests grating the carrot on the coarsest part of a box grater, since she really wants you to see the carrot in every slice. We loved this addition and found it added a pleasant sweetness and unique texture.

Another interesting twist in this version of meat loaf is that Erin calls for 1/2-inch cubes of bread instead of fresh bread crumbs or torn bread. Again, this results in small pieces of bread throughout each slice of meat loaf, adding texture and interest. Spinach-stuffed meat loaf is practically a meal unto itself. Either alone seasoned with garlic powder or Italian seasoning, or layered with other ingredients like cheese, roasted red peppers or ham, spinach adds color and a few added health benefits. It works for both a pinwheel-type stuffed meat loaf or one made in a loaf pan.

When using fresh spinach, baby spinach leaves are the easiest to layer in the middle of a meat loaf. Because they’re so tender, they’ll wilt right into the loaf; no need to cook it ahead of time. If using frozen spinach, thaw and drain it to get the excess water out. While meat loaf loves moisture, too much can make it mushy.

Butter and Garlic Mushrooms with Onions

Mushrooms

Mushrooms add a good burst of umami flavor and heartiness to meat loaf. But because they contain a lot of moisture, it’s best to cook them before stuffing inside the loaf. They’re great with aromatics like fresh herbs or garlic.

One idea: Saute 1/2 pound sliced mushrooms and 1 cup of diced onion in 2 tablespoons of butter. Add 2 cups of breadcrumbs, some dried thyme, salt and pepper and combine. Place half the meat filling in a loaf pan or on a baking sheet, top with the mushroom filling and the rest of the meat, lightly shape and bake. Or combine the cooked mushroom mixture with cream cheese or Boursin cheese instead of breadcrumbs for a creamier filling.

Zucchini

Zucchini is another great way to add more nutrition to meat loaf, but it’s best when paired with other vegetables and maybe some cheese. Like spinach, it can add some extra juiciness to meat loaf, especially when using a leaner meat like turkey or chicken, but you’ll want to squeeze out most of the liquid so it’s not too much moisture. Use fresh zucchini for the best results, and no need to cook it ahead of time. Zucchini easily cooks in the center while the meat loaf bakes.

Try layering thinly sliced ribbons with roasted red peppers and mozzarella cheese, or combine shredded zucchini with Parmesan and Italian seasoning. Take that Italian inspiration a bit further and top the meat loaf with tomato or pasta sauce before it bakes.

Prosciutto

The thinly sliced Italian ham can be used as a wrap on the outside of meat loaf, but it’s equally good as a filling. Prosciutto works particularly well in rolled stuffed meat loaf recipes, where it becomes sort of a protective shield for other ingredients.

For a pinwheel effect, pat your meat loaf mixture into a 15×10-in. rectangle on a large piece of heavy-duty foil. Starting with a few pieces of prosciutto, layer thinly sliced Havarti or mozzarella cheese, fresh basil and sun-dried tomatoes (drained of oil and cut into thin strips) on top of the meat. Roll it up jelly-roll style, starting with a short side and peeling the foil away while rolling. Seal the seams and ends, and place the meat loaf seam-side down on a greased baking sheet. Bake uncovered at 350°F for 75 to 85 minutes or until no pink remains and a thermometer reads 160°. Let stand for 5 minutes before slicing.

Similar to prosciutto, deli ham adds an extra layer of salty flavor to meat loaf. Ham and cheese together? Perfection! Smoked, black forest or honey ham are all great options. For cheese, try cheddar, Havarti, American or pepper jack—it all works.

Do like contributor Barb Jacobsen and make a swirled meat loaf cordon bleu with ham, Swiss cheese and mushrooms. Or go Italian with Mrs. W. G. Dougherty’s Sicilian meat roll stuffed with ham and mozzarella.

For those times when you need to hide veggies to get kids to eat them, a broccoli-stuffed meat loaf should do the trick. Broccoli and cheese—even better!

You don’t want to use big pieces of raw broccoli here. Instead, chop the broccoli or pulse in a food processor a couple of times to get smaller pieces. Pre-cooking raw broccoli is also a good idea to ensure it’s soft when serving the meat loaf. Either steam the broccoli before chopping or saute chopped broccoli with a bit of olive oil and garlic. If using frozen broccoli, allow it to thaw and then drain the excess moisture; no need to pre-cook it.

For broccoli and cheese-stuffed meat loaf, layer the broccoli with cheddar or American cheese, every kid’s favorite; blend with cream cheese and Parmesan and spread on to the meat loaf before rolling or topping; or try some dill Havarti with broccoli for a more grown-up dish.

Mashed Potatoes

Talk about a meal in one. Mashed potato-stuffed meat loaf is the ultimate comfort food. This is a great way to use up leftover mashed potatoes, but you can make fresh ones via microwaved or boiled potatoes for this meat loaf. Even instant potatoes work in a pinch.

A good mashed potato filling should get a boost of flavor from other ingredients. Think: sour cream, cheddar cheese, chives or bacon. Basically anything you’d put on a loaded baked potato can be added to mashed potatoes to stuff meat loaf. All you’ll need is a green salad, green beans or any other sides for meat loaf to complete the meal.

We mentioned using roasted red peppers in various stuffed meat loaf recipes, but you can also use fresh bell peppers, too. The sweetness from red, orange or yellow offers a nice contrast to saltier fillings like meats and cheeses, plus they’ll add a burst of color.

You can also use poblano peppers or jalapenos for a little heat. Slice roasted or grilled poblano peppers into thin strips, and layer them with Oaxaca cheese for a Mexican spin on meat loaf. Or make a jalapeno poppers-type filling with diced jalapeno peppers mixed with cream cheese, shredded cheddar and bacon.

Don’t let the elegant bacon-wrapped exterior fool you, though—this Pioneer Woman meat loaf is easier than it looks. Like most of Ree’s comfort food recipes, this one is super approachable for cooks of all skill levels. Made almost entirely in a single bowl, it’s a fuss-free recipe perfect for busy weeknights or making ahead to serve a crowd at your next family dinner.

The Pioneer Woman’s Meat Loaf Recipe

The Pioneer Woman’s recipe makes one generously-sized meat loaf that can easily serve eight people.

Ingredients

  • 1 cup milk
  • 6 bread slices
  • 2 pounds ground beef
  • 1 cup Parmesan cheese, grated
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

I’ve eaten a lot of meat loaf in my life, and this recipe is hands-down my favorite. (Dare I say, it’s even better than this Ina Garten meat loaf?)

I had never made a meat loaf using soaked pieces of fresh bread before (or these other secret meat loaf ingredients), but I loved the supreme moisture and slightly springy texture it lent to the recipe. The sweet yet slightly spicy sauce was also a fantastic finish. It gave the meat loaf so much flavor and made the bacon-wrapped exterior beautifully caramelized and crisp.

The only thing I would change if I made this recipe again? My choice of pants. I found myself going back for a second third helping of this divine meat loaf, so pants with an elastic waistband are highly recommended.

  • 1/3 cup chicken stock or broth
  • 1 tablespoon tomato paste
  • 2-1/2 pounds ground chuck (Garten recommends 81% lean)
  • 1/2 cup plain dry bread crumbs
  • 2 extra large eggs, whisked
  • 1/2 cup ketchup

Directions

Step 1: Prepare the onions

Preheat the oven to 350°F. Line a large sheet pan with parchment paper.

Heat the olive oil in a medium saute pan over medium-low heat. Add in the chopped onions, thyme leaves, salt and pepper. Cook the onions for 8 to 10 minutes, stirring occasionally, until the onions are soft and translucent. Remove the pan from the heat. Stir in the Worcestershire sauce, chicken stock and tomato paste. Let the mixture cool slightly.

Step 2: Make the meat mixture

Place the ground chuck, bread crumbs, eggs and the cooled onion mixture into a large bowl. (These mixing bowls are Ina Garten-approved tools.) Gently mix everything using a fork or your hands. Ina says not to mash or compact the mixture as this will create a tough meat loaf.

Step 3: Shape the meat loaf

Move the meat mixture onto the lined baking sheet. Use your hands to shape it into a loaf. Mine was about 12 inches long and 6 inches across. Spread the ketchup evenly over the top of the loaf.

Step 4: Bake

Fill a baking pan with hot tap water and place it in the oven on the rack below the meat loaf. (Ina says this helps prevent cracks in the top of the loaf.) Place the meat loaf on the rack above the water and bake for 60 to 75 minutes—until the meat is cooked through. The internal temperature should be 160°. This recipe tastes like a classic meat loaf you’d eat at Grandma’s or find at a small-town restaurant, with the mild flavor of onion and thyme throughout and tangy ketchup on top. My husband and I really enjoyed it. Because we like strong, spicy flavors, we also added hot sauce and salsa to our slices.   • Shaping the loaf: Follow Ina’s advice on gently mixing the meat with your hands, but do add a little pressure when shaping the loaf. Otherwise, the slices will fall apart a bit when you slice them.
  • Change the temperature: Even though Ina’s recipe lists the oven temperature as 325°, I went with a higher temp of 350°. That’s because several readers commented that 325° was too low and the meat loaf took too long to cook. And on her TV, she does recommend 350°.   • Flavor variations: Some ways to flavor this meat loaf that Ina’s readers like are adding diced garlic and Creole seasoning to the meat. Some readers substituted ground pork and ground bacon for some of the beef in the mixture. If you love balsamic-based recipes, try mixing balsamic vinegar or brown sugar with the ketchup.
