    • 1 round (8 ounces) Brie cheese
    • Toasted French bread baguette slices

    Directions

    1. Preheat oven to 400°. In a large skillet, heat butter and oil over medium-high heat. Add mushrooms, onions, salt and pepper; cook until golden brown, 12-14 minutes, stirring occasionally. Add garlic; cook 1 minute longer. Stir in wine. Bring to a boil; cook until liquid is almost evaporated.
    2. Remove rind from top of cheese. Transfer to a 1-1/2-qt. round baking dish. Top with mushroom mixture. Bake, uncovered, until cheese is melted, 15-20 minutes. Serve the Brie with baguette slices.

    Ingredients

    • 3 cups sliced onions
    • 2 tablespoons canola oil
    • 1 tablespoon brown sugar
    • 1 tablespoon balsamic vinegar
    • 1/2 teaspoon salt
    • 1 round loaf sourdough bread (1 pound)
    • 1 round (8 ounces) Brie cheese

    Directions

    1. In a large skillet, saute onions in oil until softened. Reduce heat to medium-low; add the brown sugar, vinegar and salt. Cook, stirring occasionally, for 30-35 minutes or until onions are deep golden brown.
    2. Cut top third off loaf of bread; hollow out enough bread from the bottom to make room for cheese. Cube removed bread; set aside. Using a knife, make 2-in. cuts into loaf around edge of bread at 1-in. intervals. Remove rind from cheese; cut cheese in half horizontally. Layer half of the cheese and onions in bread. Repeat layers.
    3. Transfer to an ungreased baking sheet. Bake at 350° for 25-30 minutes or until cheese is melted. Let stand for 10 minutes. Serve with bread cubes.

    • 1/2 pound sliced fresh mushrooms

    • 3 garlic cloves, minced

    • 1 teaspoon dried rosemary, crushed
    • 1/8 teaspoon seasoned salt
    • 1/8 teaspoon pepper
    • 1 sheet frozen puff pastry, thawed
    • 1 round (8 ounces) Brie cheese, halved horizontally
    • 1 large egg, lightly beaten

    Directions

    1. Preheat oven to 400°. In a large skillet, heat butter and oil over medium-high heat. Add mushroom and onion; saute 6-8 minutes or until golden brown. Add garlic and seasonings; cook 1 minute longer. Remove from heat; transfer to a bowl and refrigerate until cooled.
    2. On a lightly floured surface, unfold puff pastry. Place 1 Brie half on pastry, cut side up. Top with mushroom mixture and remaining Brie half, cut side down. Pull corners of pastry up over cheese, pinching together to seal on top. Place on an ungreased baking sheet, seam side down. Brush top and sides of pastry with egg. Bake until puffed and browned, 30-35 minutes.
