Funfetti Cookies

Warning: Baking these funfetti cookies may result in spontaneous joy, sprinkle overload and absolutely no leftovers.

Ingredients

  • 3/4 cup sugar
  • 2/3 cup butter, softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup rainbow sprinkles, divided

Directions

  1. Preheat oven to 350°. In a large bowl, beat sugar, butter, eggs and vanilla until blended. Combine the flour, baking powder, baking soda and salt; gradually beat into egg mixture. Beat in 2 tablespoons sprinkles until just combined.
  2. Drop by tablespoons 2-in. apart onto parchment-lined baking sheets. Top with remaining 2 tablespoons sprinkles; press gently to adhere. Bake until edges are lightly browned, 10-12 minutes. Cool on pans for 1-2 minutes before removing to wire racks to cool completely.
