There’s nothing quite like the moment you pull out a batch of freshly baked Italian rolls and proceed to lather them with softened butter. Most recipes take hours on end to make since you have to proof them but this one promises delicious soft and tender bread in under 45 minutes. You can enjoy them for breakfast, lunch and dinner.

  • Dry ingredients: We whisk the flour, sugar, yeast, garlic salt, onion powder, Italian seasoning and dried parsley. The yeast helps the bread rise and become fluffy.
  • Wet ingredients: We gently heat the milk, water and butter. Then, we beat an egg and combine all these wet ingredients with the dry ingredients before kneading.
  • Cheese: We mix grated Parmesan cheese into the dough to enhance its flavor.

Preheat the oven to 375°F. Grab a large mixing bowl and combine the flour, sugar, yeast, garlic salt, onion powder, Italian seasoning and dried parsley.

In a small saucepan, heat the milk, 1/4 cup of water and butter to 120° to 130°. Next, add this wet mixture to the dry ingredients and beat on medium speed just until moistened. Stir in enough remaining flour to form a stiff dough.

Step 3: Knead dough and bake

Turn the dough onto a floured surface and knead until it becomes smooth and elastic, about six to eight minutes. Next, place the dough in a greased bowl, turning once to grease the top. Cover the dough and let it rest for 15 minutes.

Next, punch the dough down. Then, turn it onto a lightly floured surface and divide it into 15 pieces. Shape each piece of dough into a ball. Melt the remaining butter and dip the tops of the balls in the butter and remaining cheese. Place them in a greased 13×9-inch baking pan. Cover them and let them rest for 10 minutes. 

Bake the rolls for 20 to 25 minutes or until golden brown.

Italian Roll Recipe Variations 

  • Fold in a different cheese: Instead of Parmesan, fold in cheddar, pepper jack or gouda.

  • 3-1/2 to 4 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 package (1/4 ounce) active dry yeast
  • 1-1/2 teaspoons garlic salt
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried parsley flakes
  • 1 cup 2% milk
  • 1/2 cup water
  • 4 tablespoons butter, divided
  • 1 egg
  • 3/4 cup grated Parmesan cheese, divided

Directions

  1. In a large bowl, combine 1-1/2 cups flour, sugar, yeast and seasonings. In a small saucepan, heat the milk, water and 2 tablespoons butter to 120°-130°. Add to dry ingredients; beat until moistened. Add egg; beat on medium speed for 3 minutes. Stir in 1/2 cup cheese and enough remaining flour to form a soft dough.
  2. Turn onto floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rest for 15 minutes.
  3. Punch dough down. Turn onto a lightly floured surface; divide into 15 pieces. Shape each into a ball. Melt remaining butter; dip tops of balls in butter and remaining cheese.
  4. Place in a greased 13-in. x 9-in. baking pan. Cover and let rest for 10 minutes.
  5. Bake at 375° for 20-25 minutes or until golden brown. Remove from pans to wire racks to cool.
