What kind of maple syrup should you use to make maple-glazed salmon?
If you love sweet and savory maple syrup recipes, you probably know the best brands of syrup. Or, maybe you buy from a local farmer and have multiple grades on hand. Starting in 2015, maple syrup is no longer divided into A and B grades. They are all now called grade A, and instead are graded by color and flavor. From lightest in color and with a delicate flavor to the darkest color and intense maple flavor, the four grades are golden, amber, dark and very dark. We recommend amber or dark for this recipe for a nice balance of flavor, but golden would also work.What do you serve with maple-glazed salmon?

Ingredients
- 6 salmon fillets (6 ounces each)
- 1/4 cup packed brown sugar
- 1/4 cup maple syrup
- 3 tablespoons reduced-sodium soy sauce
- 1 tablespoon Dijon mustard
- 1/4 teaspoon pepper
- 4 teaspoons sliced almonds, toasted, optional
Directions
- Preheat oven to 425°. Place salmon fillets in a greased 13x9-in. baking dish. In a small bowl, combine brown sugar, syrup, soy sauce, mustard and pepper. Pour over salmon.
- Cover and bake 10 minutes. Uncover and bake 8-10 minutes longer or until fish flakes easily with a fork. Sprinkle with almonds if desired.
