In a large resealable plastic bag, combine the soy sauce, onion, canola oil, lemon juice, minced garlic and ground ginger. Add the pork roast, then seal the bag and turn it to mix and coat the pork. Refrigerate the pork for eight hours or overnight, turning a few times.

Step 2: Start the baking

Preheat the oven to 350°F. Drain and discard the marinade. Place the roast on a rack in a shallow foil-lined roasting pan. Bake it, uncovered, for 25 minutes.

Step 3: Make the glaze

In a small bowl, combine the wine or broth, honey and brown sugar. Brush half the glaze over the meat and bake it for 15 minutes longer. Brush the meat with the remaining glaze. Bake, uncovered, until a thermometer reads 145°, 10 to 15 minutes longer. Let the pork rest for 10 minutes before slicing and serving.
