Ingredients
- 1/4 cup chopped onion
- 1 tablespoon olive oil
- 1 small yellow summer squash, thinly sliced
- 1 small zucchini, thinly sliced
- 1 garlic clove, minced
- 1 plum tomato, seeded and chopped
- 1/2 teaspoon dried oregano
- 1/4 cup crumbled feta cheese
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Directions
- In a large skillet, saute onion in oil until tender. Add squash and zucchini; saute 6-8 minutes longer or until tender. Add garlic; cook 1 minute longer. Stir in the remaining ingredients; heat through.
