It often gets crazy when everyone first wakes up, and I like to have food available whenever people are ready to eat. Ingredients
- 1 package (28 ounces) frozen O'Brien potatoes, thawed
- 1 pound bacon strips, cooked and crumbled
- 2 cups shredded Swiss cheese
- 12 large eggs
- 2 cups 2% milk
- 1 teaspoon seasoned salt
- 1 teaspoon pepper
- Minced chives, optional
Directions
- In a greased 4- or 5-qt. slow cooker, layer potatoes, bacon and cheese. In a large bowl, whisk eggs, milk, seasoned salt and pepper; pour over top. Cook, covered, on low 4-5 hours or until eggs are set. Turn off slow cooker. Remove crock insert to a wire rack; let stand, uncovered, 30 minutes before serving. Garnish with minced chives, if desired.
