In this peach blueberry crisp, aka the ultimate summer harvest dessert, fresh peaches and blueberries get dressed up with a buttery oat topping.
Ingredients
- 4 cups sliced fresh or frozen peaches
- 2 cups fresh or frozen blueberries
- 2/3 cup sugar
- 3 tablespoons all-purpose flour
- 1/2 teaspoon grated lemon zest
- 1/8 teaspoon salt
- TOPPING:
- 1/2 cup all-purpose flour
- 1/2 cup old-fashioned oats
- 1/2 cup packed brown sugar
- 3/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 5 tablespoons cold butter
Directions
- Preheat oven to 375°. In a large bowl, combine peaches, blueberries, sugar, flour lemon zest and salt. Transfer to a greased 11x7-in. baking dish.
- In a small bowl, combine flour, oats, brown sugar, cinnamon and salt. Cut in butter until mixture resembles coarse crumbs; sprinkle over fruit. Bake until bubbly and topping is lightly browned, 30-35 minutes. Serve warm.
