Riesling and Swiss Cheese Fondue

Swiss Cheese Fondue Tips
What other cheeses can you put in Swiss cheese fondue?
You might try this Swiss cheese fondue recipe with other cheeses such as fontina, Gruyere or Gouda.
What else can you serve with Swiss cheese fondue?
Crusty homemade bread is probably the most popular dipper for fondue, but the possibilities are endless. Dunk apples, pears, broccoli, cauliflower, roasted red potatoes, sauteed shrimp, roasted cubed chicken or slices of grilled steak.
Can you make Swiss cheese fondue without a fondue pot?
As with other fondue recipes, Swiss cheese fondue can easily be made without a fondue pot. The fondue is prepared on the stovetop, then transferred to a fondue pot to keep the cheese warm and melty. If you don't have this appliance, transfer the fondue to a small slow cooker set on warm or low heat. Or keep it on the stovetop over very low heat and stir occasionally.

Yield
3 cups
Ingredients
- 4 cups shredded Swiss cheese
- 2 tablespoons all-purpose flour
- 1 cup dry riesling wine
- 1 garlic clove, minced
- 2 tablespoons sherry
- 1 tablespoon lemon juice
- 1/8 teaspoon ground nutmeg
- Sliced smoked sausage, French bread baguette and roasted Brussels sprouts
Directions
- In a large bowl, combine the cheese and flour. In a large saucepan, heat wine and garlic over medium heat until bubbles form around sides of pan (do not boil).
- Reduce heat to medium-low. Add 1/2 cup cheese mixture; stir constantly until almost completely melted. Continue adding cheese, 1/2 cup at a time, allowing cheese to melt almost completely between additions. Stir in the sherry, lemon juice and nutmeg.
- Transfer to a heated fondue pot; keep fondue bubbling gently. Serve with sausage, bread cubes and Brussels sprouts. If fondue becomes too thick, stir in a little additional wine.
