Our roasted cabbage recipe takes cabbage steaks and seasons them simply with olive oil, salt and pepper, then roasts them at a high temperature until they’re tender on the inside and caramelized on the outside.   • Cabbage: Use a large head of green cabbage for this recipe. Red cabbage tastes very similar and has a beautiful color when cooked, but it might need more time in the oven since it’s a bit heartier.

Preheat the oven to 425°F. Place the cabbage slices on a foil-lined baking sheet.

Sprinkle the cabbage with salt and pepper.

Step 2: Roast the cabbage

Roast until the cabbage is tender and browned, about 50 to 60 minutes, flipping halfway through. If desired, drizzle with additional olive oil and sprinkle with additional salt and pepper just before serving.

Roasted Cabbage Variations

  • Make it cheesy: Adding cheese to your food is always a good idea, and this roasted cabbage recipe is no exception. Pull the cabbage out of the oven 10 minutes early, then grate some salty Parmesan over the cabbage to let it melt in the oven. Or give it a good, cheesy dusting just before serving.
  • Add some more flavor: Try tossing some different seasonings on before you roast cabbage, such as garlic, onion or chili powder, or a spice blend like za’atar. You could even drizzle some honey over it. When it’s done cooking, finish it with a squeeze of fresh lemon juice.

You can cut cabbage in all sorts of ways for roasting. You can cut it into 1-inch-wide slices or thicker wedges. If it’s a smaller cabbage, you can even just quarter it. The one thing you want to avoid is cutting it too thin, which can make it fall apart during cooking.
