Roasted Turnips

Don't knock roasted turnips until you've tried them! The oven mellows this root vegetable, giving it beautiful caramelized edges and a melt-in-your-mouth texture.

Ingredients

  • 2 pounds chopped, peeled turnips
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder, optional

Directions

  1. Preheat oven to 350°. Place turnips on a greased 13x9-in. baking dish. Drizzle with oil; sprinkle with salt, pepper and if desired, garlic powder. Toss to coat. Roast 30 minutes.
  2. Increase oven temperature to 450°. Bake an additional 15-20 minutes or until vegetables are tender.
