Strawberry Riesling Wine Spritzer

Ingredients
- 1-3/4 cups sliced fresh strawberries
- 1 cup sugar
- 1 cup water
- 4 to 5 tarragon sprigs
- 2 tablespoons lime juice
- 1 teaspoon whole peppercorns
- Ice cubes
- 3 cups sweet white wine, such as Riesling, chilled
- 3 cups club soda, chilled
Directions
- In a small saucepan, bring first 6 ingredients to a boil. Reduce heat; simmer 20 minutes. Remove from heat. Cool completely. Strain through fine-mesh strainer into a small bowl (do not press berries). Refrigerate syrup until chilled.
- For each serving, fill a tall glass with ice. Add 1/2 cup wine, 1/2 cup club soda and 1/4 cup strawberry syrup. If desired, garnish with additional tarragon.
