Velveeta fudge sounds like a crazy idea, but it turns out it's crazy enough to work, resulting in a delightful treat.
Ingredients
- 8 ounces Velveeta, cubed
- 3/4 cup butter
- 6 ounces unsweetened chocolate, chopped
- 2 pounds (8 cups) confectioners' sugar
- 1 teaspoon vanilla extract
- 1-1/2 cups chopped pecans

Slowly add confectioners' sugar to the chocolate mixture while beating on medium-low speed until incorporated, 2-3 minutes. Beat in vanilla extract. Fold in pecans.
- Transfer fudge mixture to prepared baking dish; smooth into an even layer. Cover; refrigerate at least 4 hours. Cut into 1-inch squares.

My mom and I make it every year for Christmas and give it to others; now my in-laws ask for it! Use saran wrap to smooth the fudge into the pan for a nice, glossy, finished look. —Dara Wennihan, Tarkio, Missouri
