Velveeta Fudge

Velveeta fudge sounds like a crazy idea, but it turns out it's crazy enough to work, resulting in a delightful treat.

Ingredients

  • 8 ounces Velveeta, cubed
  • 3/4 cup butter
  • 6 ounces unsweetened chocolate, chopped
  • 2 pounds (8 cups) confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1-1/2 cups chopped pecans

Directions

  1. Line a 13x9-in. baking dish with waxed paper.
  2. Place velveeta, butter and chocolate in a large microwave-safe bowl. Microwave in 30 second increments, stirring in between, until melted. Slowly add confectioners' sugar to the chocolate mixture while beating on medium-low speed until incorporated, 2-3 minutes. Beat in vanilla extract. Fold in pecans.
  3. Transfer fudge mixture to prepared baking dish; smooth into an even layer. Cover; refrigerate at least 4 hours. Cut into 1-inch squares.
