Zucchini Tots

Crispy zucchini tots are one of the tastiest ways to eat your veggies. This recipe combines zucchini with onions, garlic, cheddar cheese and Italian seasoning for powerful flavor.

Ingredients

  • 2 cups shredded zucchini
  • 1 teaspoon salt, divided
  • 2 large eggs, lightly beaten
  • 1/4 cup grated onion
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup panko bread crumbs
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning

Directions

  1. Preheat oven to 400ºF. In a large bowl, toss zucchini and 1/2 teaspoon salt; let stand 10 minutes. Place zucchini in a dish towel and squeeze out the excess liquid; discard liquid.
  2. In a large bowl combine egg, onion, cheese, bread crumbs, remaining 1/2 teaspoon salt, pepper, garlic powder and Italian seasoning; fold in zucchini.
  3. Shape 1 tablespoon of zucchini mixture into 1-inch long cylinders; place on parchment paper-lined baking sheet 1-inch apart. Bake 15-18 minutes or until edges are golden brown.
