Ingredients
- 2 large eggs, room temperature
- 3/4 cup canola oil
- 3/4 cup honey
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 2 cups grated carrots (about 3 large carrots)
Directions
- Preheat oven to 350°. In a bowl, combine eggs, oil, honey and vanilla; beat until smooth. In another bowl, whisk next 7 ingredients for 30 seconds. Stir flour mixture into egg mixture just until combined. Add carrots; mix well.
- Pour batter into a lightly greased 9x5-in. loaf pan; bake until a toothpick inserted in center comes out clean, about 1 hour. Cool for 10 minutes before removing to a wire rack.
