Frozen Burrito Ingredients

  • Ground beef: The beef adds a hearty and savory base to the burrito filling, delivering protein and richness.
  • Onion: This aromatic ingredient provides a subtle sweetness and enhances the overall flavor profile of the dish.
  • Salsa: Salsa brings moisture to the filling while offering a tangy, slightly spicy kick to complement the other ingredients.
  • Taco seasoning: The seasoning adds a robust blend of spices, delivering heat, smokiness and depth to the burrito filling. Use your favorite brand or try our homemade taco seasoning.
  • Pinto beans: When blended, the beans add a creamy texture and increase the fiber content of the dish.
  • Water: When combined with the beans it helps create a smooth consistency, allowing the mixture to blend seamlessly with the other ingredients.
  • Cheddar cheese: The shredded cheese melts into the filling, offering richness and a sharp, savory bite that ties everything together.
  • Flour tortillas: These warm tortillas serve as the soft and pliable wrapper, holding the filling securely while adding a chewy texture. Homemade tortillas can make these burritos extra special.

Directions

Step 1: Cook the beef and onion

In a large skillet, cook the ground beef and finely chopped onion over medium heat. Break the meat into crumbles as it cooks, stirring frequently until the beef is browned and no longer pink, about five to seven minutes. Drain any excess fat from the skillet.

Step 2: Add salsa and seasoning

Stir the salsa and taco seasoning into the cooked beef mixture. Bring the mixture to a boil over medium heat and then reduce the heat and let it simmer uncovered for two to three minutes. Transfer the mixture to a large bowl and set aside.

Step 3: Prepare the bean mixture

In a food processor, combine the drained pinto beans and water. Process until the beans are almost smooth but still slightly textured. Stir the bean mixture into the beef mixture and mix in the shredded cheddar cheese until everything is well combined.

Step 4: Assemble the burritos

Spoon about 1/2 cup of the beef and bean mixture down the center of each warmed tortilla. Fold the sides of the tortilla over the filling and then fold the bottom and top edges to fully enclose it. Roll each burrito up tightly.

Frozen Burrito Variations

  • Swap the protein: Substitute ground turkey or chicken for the beef to create a lighter, leaner version of the burritos.
  • Add veggies: Stir in sauteed bell peppers, zucchini or corn to the beef mixture for extra color, flavor and nutritional value.
  • Go spicy: Use a spicier salsa or add diced jalapeños to the beef mixture for a burrito with more heat.
  • Make it vegetarian: Replace the beef with additional beans, like black beans or refried beans. You can also add extra vegetables for a hearty meatless option.
  • Use whole wheat tortillas: Swap in whole wheat tortillas to boost the fiber content and add a nutty flavor to the burritos.
  • Try different cheese: Replace cheddar with Monterey Jack, pepper jack or a Mexican cheese blend for a slightly different flavor and texture.

How to Store Frozen Burritos

The best way to store these burritos is to wrap each one individually in waxed paper followed by a layer of foil. This double wrap helps prevent freezer burn and keeps them fresh for up to one month. When you’re ready to eat, just remove the waxed paper and foil and then microwave them for a quick and easy meal.

To freeze, wrap each burrito first in waxed paper, then in foil, and freeze for up to one month.

How do you reheat a frozen burrito?

To reheat a frozen burrito, remove the waxed paper and foil. Place the burrito on a microwave-safe plate and microwave on high for two minutes 30 seconds, turning it over halfway through to ensure even heating. Let it stand for 20 seconds before eating to allow the heat to distribute fully.

Can I bake these burritos instead of microwaving them?

Yes, you can bake the burritos. Preheat your oven to 375°F, remove the waxed paper and place the foil-wrapped burritos on a baking sheet. Bake for 25 to 30 minutes or until heated through. For a crispy finish, remove the foil during the last five minutes of baking.

Can I add rice to the burrito filling?

Absolutely! Adding cooked rice to the filling will make the burritos heartier. Stir in 1/2 to 1 cup of cooked rice when you mix the beans and cheese into the beef mixture.

What’s the best way to prevent burritos from getting soggy?

Make sure the filling isn’t too wet to keep your burritos from getting soggy. Simmer the salsa and beef mixture long enough to reduce excess liquid and avoid overfilling the tortillas.

What are some great side dishes to serve with burritos?

For a complete meal, there are plenty of great sides to serve with burritos. Guacamole makes perfect accompaniment, adding creaminess and freshness. For something more substantial, a black bean salad brings extra fiber and color to the plate. For a fun option, you can’t go wrong with Mexican street corn (elote), grilled and topped with mayo, cheese and chili powder.
