Stuffed to the brim with hearty proteins marinated in citrus dressing, this grilled chicken wrap is the ideal lunch to satisfy you during busy work days. You can cook a few of these handhelds in advance, pop them in your fridge (or freezer) and reheat them when you need a quick and easy lunch. You only need to dedicate 20 minutes to making these and then you can garnish them with delicious toppings like refreshing shredded lettuce, savory cheddar cheese, rich sour cream or briny black olives. 

Grilled Chicken Wrap Ingredients

  • Marinade: We combine olive oil, lime juice, minced garlic, cumin and cayenne pepper to create a spicy citrus marinade for the chicken.
  • Chicken: We marinate boneless chicken breast in a citrusy dressing to infuse bright flavors.
  • Tortillas: We rely on flour tortillas for the base of these wraps. 
  • Toppings: To upgrade these wraps, we fill them with a variety of toppings, such as shredded lettuce, cheddar cheese, black olives, diced tomatoes, green onion and sour cream. 

Directions   

Step 1: Marinate the chicken

Get a large resealable plastic bag and mix the first five ingredients: olive oil, lime juice, minced garlic, cumin and cayenne pepper. Then, add the chicken to the bag with this marinade. Seal the bag and refrigerate the chicken for up to two hours.

Step 2: Grill the chicken

Drain and discard the marinade from the chicken. Place a griddle on medium-high heat and grill the uncovered chicken for four to five minutes on each side or until it’s no longer pink. Then, slice the chicken into strips.

Step 3: Assemble the wraps

Serve the chicken on warmed tortillas and then add your choice of toppings.

We recommend storing the tortillas, chicken and toppings separately. First, allow the chicken to cool and come to room temperature. Depending on how much is left, divide it into smaller portions and store it in an airtight container. Refrigerate all of the fixings for three to four days.

Ingredients

  • 1/4 cup olive oil
  • 3 tablespoons lime juice
  • 2 garlic cloves, minced
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1/2 pound boneless skinless chicken breast
  • 2 flour tortillas (8 inches), warmed
  • Optional toppings: chopped green onions, sliced ripe olives, chopped tomatoes, shredded cheddar cheese, sour cream and/or shredded lettuce

Directions

  1. In a shallow dish, combine the first 5 ingredients; add the chicken and turn to coat. Cover; refrigerate for up to 2 hours.
  2. Drain and discard marinade. Grill chicken, uncovered, over medium heat for 4-5 minutes on each side or until juices run clear. Slice chicken into strips.
  3. Serve in tortillas with toppings of your choice.
