Ingredients
- 1-1/2 cups vegetable stock
- 3/4 cup quinoa, rinsed
- 1 pound Italian turkey sausage links, casings removed
- 1 medium sweet red pepper, chopped
- 1 medium green pepper, chopped
- 3/4 cup chopped sweet onion
- 1 garlic clove, minced
- 1/4 teaspoon garam masala
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
Directions
- In a small saucepan, bring stock to a boil. Add quinoa. Reduce heat; simmer, covered, until liquid is absorbed, 12-15 minutes. Remove from heat.
- In a large skillet, cook and crumble sausage with peppers and onion over medium-high heat until meat is no longer pink, 8-10 minutes. Add garlic and seasonings; cook and stir 1 minute. Stir in quinoa.
