Salmon with Fruit Salsa

Ingredients

  • 2 cups chopped seedless watermelon
  • 1-1/2 cups cubed fresh pineapple
  • 1/3 cup chopped sweet red pepper
  • 1/4 cup chopped green onions
  • 1/4 cup minced fresh cilantro
  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 1 teaspoon chopped jalapeno pepper
  • 1/2 teaspoon salt, divided
  • 1/4 teaspoon pepper, divided
  • 4 salmon fillets (6 ounces each)

Directions

  1. In a large bowl, combine the first eight ingredients; add 1/4 teaspoon salt and 1/8 teaspoon pepper. Let stand at room temperature for at least 30 minutes.
  2. Sprinkle salmon with remaining salt and pepper. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill salmon, covered, over medium heat or broil 4 in. from the heat for 6-9 minutes on each side or until fish flakes easily with a fork. Serve salsa with a slotted spoon with salmon.
