Well, I veganized this by using vegetable broth.<\/p>
<\/p>
I omited the sugar & oil.<\/p>
<\/p>
I subbed in Collard Greens, 4 the carrots. I like my creations 2 have a bit of green in them 4 color, texture & higher nutrition.<\/p>
<\/p>
I omitted 3 of the 4 types of beans, which I found 2 b overkill. But, I can see the point of them 2 add different textures & colors to the chili, especially if 1 gets a little of each in a spoonful.<\/p>
<\/p>
I used Black Eyed Peas because that's what I had.<\/p>
<\/p>
I used tomato paste diluted with vegetable broth, insted of diced tomatoes.<\/p>
<\/p>
I did use some zuccini from my garden & potatoes.<\/p>
<\/p>
I omited the yellow squash, & ketchup.<\/p>
<\/p>
I've never heard of potatoes being in chili b4, so to me, this is a stew with Mexican or SouthWestern flair 2 it.<\/p>
<\/p>
So, my stew was: <\/p>
<\/p>
Tomato broth base, with zuccini, Collard Greens, black eyed peas & potatoes, aka veggies, starch & protein, with garlic, onion, bell pepper, chili powder, cumin, oregano, & Badia Complete Seasoning. I added some corn starch 2 the broth base, 2 thicken it a bit into a more saucy\/stewy base.<\/p>
<\/p>
Oh, I made the dish for 1 person.<\/p>
<\/p>
I use a ratio in all my recipies of 1\/2 cup VEGAN protein [beans, chickpeas, lentils, nuts, etc.] 1\/2 cup of veggies, in this case 1\/2 cup of collard greens because they shrivel up when cooked, 1\/4 cup diced zuccini, which I charred in a pan b4 hand 4 a few minutes 2 reduce the wateryness of them], & 1\/2 a cup of potatoes as the starch. So, the whole single serving dish, equals 1 & a 1\/2 cups of food, 4 a small amount of cost<\/p>
