I had to sign up just to review this cake. I had an old can of sauerkraut that I had no idea what to do with all these years until my daughter was looking through a TOH cookbook and came across the beautiful picture for this cake. She asked if it would be good. I said that the sauerkraut would be the acidifying agent to help leaven the cake and it would also add a texture much like carrots or zucchini do to some quick breads and cakes, so we decided to try it. The smell of the sauerkraut was so awful when we opened it up and drained it, I started to wonder if that is what it is supposed to smell like or was it too old?! We went ahead anyway and chopped the sauerkraut fine. My daughter tasted the batter and said you could taste the sauerkraut flavor, but I tried to reassure her that chemistry would happen in the oven that would take care of that (I had my doubts though!) We baked the cakes in the oven and it only took 30 minutes at high Denver, CO altitude. When I turned them out they were super moist. We went on to make the frosting and it turned out silky and whipped, very easy to work with. The finished product was so delicious, and the little chewy texture pieces from the sauerkraut did not offend anyone. I have 7 kids and they all approved. I would definitely make this cake again and again. In fact, I will be freezing the remaining sauerkraut that I have left over so I can make this cake again soon. This recipe was very good. I made a few changes, as I am trying to watch my weight. Instead of 1\/2 cup of butter I used 1\/4 and added 1\/4 cup of prune puree. Instead of 1 1\/2 cups of sugar, I used 3\/4 cup sugar and 3\/4 cup of spenda. Instead of water I used 1 cup of coffee. For the icing I added only 1\/4 cup of butter 8 oz of low fat cream cheese, plus skim milk to make the icing creamy. It was absolutely fantastic!
