I made this for dinner last night and for leftovers for the week. It is hard to find whole chickens or even cut-up chicken pieces in my area, so I used a pack of skinless\/boneless breasts and another pack of skinless\/boneless thighs. Here is where my mistake comes in: There is a huge difference between 3-4# of skinless\/boneless chicken and a 3-4# whole chicken complete with skin and bones. The cooked weight of my chicken when I took it out to chop\/shred was almost 3 pounds! I have a whole lot of chicken. So, I took half of the chicken and put it back in with the broth and veggies, and half went into the freezer for another recipe. Food for days and days! I did make a change or two: I used broth in place of the water and the wine. And I felt that there was too much liquid (after all, I had twice the amount of chicken in the pot), so I added almost a pound of frozen cut green beans that I had thawed in warm water. This was the perfect decision as the taste and texture were perfect and the orange carrots and green beans were gorgeous! I used frozen biscuits and they were oh, so good with this stew.
