I really enjoyed these cookies! I almost didn't make these after reading another review, but the ingredients sounded so yummy that I tried the recipe anyways. I'm so glad that I did! I used granny smith apples and made sure to dice them finely, (1\/4\" cubes). I have been keeping them in the fridge ( what with the baked apple and all) and they have held up well over the last few days.
