These oatmeal chocolate chip bars are a delightful way to get some protein.\u00a0 They’re the perfect quick snack when you need a boost in energy but are craving a bit of sweetness, too. The oats provide a chewy base, while peanut butter adds creamy richness and just a hint of nuttiness to the bar. Every single bite is a delicious balance of sweet and savory with the melty chocolate chips throughout. These bars are easy to make and even easier to enjoy, making them an ideal option for a quick breakfast on the go or an afternoon pick-me-up. Equally a treat for kiddos and adults, you can easily double the batch for a satisfying snack that will become a family favorite.<\/p>\n
Preheat oven to 350\u00b0F and prepare a 13×9-inch baking pan by greasing it well. Then, in a large bowl or stand mixer, cream together the butter, sugars and peanut butter until light and fluffy. Beat in egg and vanilla. Set aside.<\/p>\n
