I was looking for the half-baked potato recipe because I had forgotten the finer points of baking this delicious food. I came across this version, and I am surprised at the process chosen. It seems wasteful to me. You are coating the baking sheet with a lot of butter and cheese rather than the potatoes. I now recall that my process includes scrubbing a large potato (russet my choice), cutting it in half lengthwise, piercing it with a fork or knife in several places, rubbing it with butter, sprinkling it with kosher salt, and coating the cutside with ground Parmesan cheese. Place cutside down on a parchment paper lined baking sheet and place in a pre-heated 400 degree oven to cook for approximately 40 minutes or until tender. Remove from oven and let rest for at least five minutes before removing potatoes to a serving plate, face up. Resting insures that the browned cheese adheres to the potato. The first time I made these I followed the recipe exactly and my family liked them. Today, I made them for the second time because my daughter requested them to go with the hamburgers we were having for Dinner. This time I scored them and I added the Parmesan and some garlic salt to the butter. My potatoes were crispier than the picture shows and my family loved them. Very good recipe. I take a knife and score the cut side of the potatoes in a tic tac toe pattern so more of the good stuff gets further into the potatoes. An awesome variation on this recipe is to use Dan-O's Chessoning in place of the Parmesan cheese. It gives an extra kick of flavor. I made these for a luncheon at my house. The guests all enjoyed them and I would make them again for the family. They are very easy to make and did not stick at all in the pan. So I melted the butter in a bowl and mixed in the fresh grated cheese and chopped potatoes, did add a wee bit of garlic powder and some fresh chopped oregano from the garden, since it was going with an Italian dish. Spread in an even layer on a stoneware sheet baking pan on grill (Just don't ever put cold stuff on baking stone, must be room temp) and they turned out wonderful. Everyone raved about them. Very good. A quick, easy alternative to plain baked potatoes. I sprinkled garlic and onion powder over the cheese before placing the potatoes in the pan. I also basted the potato skins with the butter about half way through cooking which gave the skins a little crisper texture. I normally do not eat potato skins, but I actually ate and enjoyed these.
