I needed a rye bread for Reubens and came across this recipe. Like others, I did have to kneed in extra flour; just enough to make the dough not sticky. I baked 2 loaves on a sheet and one in an 8.5x4.5x2.5 loaf pan. Bottom line, we LOVE this recipe! This bread is great for sandwiches or on its own slathered with butter and the loaves slice beautifully, thick or thin, on day 2. The taste is amazing; just the right amount of sweetness and rye flavor for us. The loaves on the sheet spread a bit more than I'd like, so I'm buying 2 more loaf pans. For us, this recipe is a definite keeper. I tried this recipe because I was bored with the one I had & wanted to try something new. I also did this using the overnight method, where you do the first rise, punch it down, stick in the frig overnight. Then turn it out & let rise for an hour(depending on how warm it is in your kitchen). Fantastic! I've been baking breads for over 30 years and this is one of the best rye recipes I've ever tasted. It is just sweet enough, the texture is perfect and the round loaves I made were beautiful. I did bake it about 10 minutes longer than the recipe called for.
