Either way, we love it because it takes less than 30 minutes to make. You can cook a big batch at the beginning of the week and dig into it as a quick meal over the next few days. Serve it with sauteed kale or a buttery piece of toasted bread.<\/p>\n
Cook the gnocchi according to the package directions, then drain it.<\/p>\n In a large skillet, heat the olive oil over medium-high. Next, saute the zucchini and peppers until the zucchini is tender.<\/p>\n Add the pesto sauce and gnocchi to the veggies, then stir in the tomatoes. If desired, top with pine nuts before serving.<\/p>\n We recommend packing this pesto gnocchi in an airtight container. It\u2019ll last in the fridge for three to four days.<\/p>\n This pesto gnocchi is the ideal meal-prep recipe. Oven roast whole bulb of garlic by slicing off top portion of head, drizzle w\/ olive oil, wrap in foil. Roast in 400 oven, 10-15 min. Meanwhile in blender or preferably Vita-Mix, add Basil leafs and olive oil. Blend in small batches as much as you need or do several and freeze in batches in a size that you'll use in a week time. Add only enough oil to keep the blender action moving, don't worry about it tho! Dry chop pine or walnuts. Pine nuts have gotten really pricey! Add to basil and oil mix along with your prefered amount of parm. cheese and cooled roasted garlic. Store in fridge up to one week, stir before use. Don't add chhese while blending, oil get's too warm. Roasting garlic gives a wonderful sweet flavor!
