I love carrots and needed a new way to prepare them. This is a lovely savory dish. The carrots I used were the standard long and thick variety, so I cut them into fat \u2018coins\u2019 varying in thickness from 1\/4\u201d to 3\/8\u201d thick, depending on whether it was cut at the tapered end or the top. I baked them in the warm butter & herbs for 55 minutes.
