I've always basted mine with butter and honey, so was looking forward to using maple syrup and brown sugar. It did not disappoint! I didn't bake mine cut side down ~ I just put them in a casserole dish cut side up, added a little water to the dish, poured the glaze in the center of each squash half and baked them like that, basting occasionally. I did double the glaze and they came out perfect. When I cook acorn squash I always make a small slice off the bottom on the squash so it has a flat surface to sit on. This helps keep the yummy filling inside.
