These are so easy and so good! I'm serving them tonight for a Halloween get-together, and I'm sure they will be a hit! I left out the extract and just used whole chocolate chips for the nose and eyes to make prep even faster.<\/p>

Agree with previous comments about chocolate hardening rapidly once extract was added - would omit adding it in the future. When it says to IMMEDIATELY add the chocolate chip eyes, it means RIGHT AWAY. I dipped a few, then went back to add the eyes and they were already hardened. It was a fine balance between keeping my white chocolate stirred \/ smooth \/ not hardened and getting the eyes on quickly enough - having a helping hand would make it easier. I made lots of these and took one platter to my Zumba class and another to my husband's place of work. They were a hit both places! I must say I did struggle with the regular white chocolate. It seemed that some of the moisture from the strawberries made it set up and I didn't add the almond extract and did let the berries sit on paper towels for several hours to drain before dipping. I finally ended up buying almond bark which worked much better. If you look up on the shelf with the chips you will see small 6-ounce boxes of Bakers' Premium White Chocolate Baking Squares. They melt beautifully and taste fabulous. I made these last Halloween for a work Halloween party. While they did taste delicious, I was not so lucky with the chocolate. When I added the almond extract, the white chocolate hardened very quickly and therefore the white \"ghosts\" looked very clumpy and not smooth like the picture. I had to more of spread the chocolate onto the strawberries since it had hardened, instead of just being able to dip them in.
