I have made this--very similar but I have never used the baking mix or flour. I use a whole bag of hash browns (2 lb.ish) Use either the southern style cubes or the shredded potatoes. I saute onions, red\/green peppers, mushrooms,--whatever you like. I cook up some bacon, or chopped ham or use breakfast sausages [cut them up into bite size pcs]. Mix the sauted vegs with the potatoes. Mix up about 6-8 eggs with some milk [2 cups or so] and pour the milk\/egg mixture slowly over the potatoe\/veg in 9x13 or some such size. Add grated cheese on top and cover with foil. Bake 350-375 til all heated through Uncover last 5-10 minutes to lightly brown the cheese.<\/p>

I have also made this, instead of using the potatoes, use stale loaf of italia n or f rench bread. Cube it up and fill up the baking pan and follow same as above. You can use whatever vegs & meats. You can use a little more or less of the milk and eggs. Just use what you have. Simple recipe and easy to adjust up or down and to use items to your preferences.
