I altered slightly but these turned out way better than I expected. Changes, I used whole ricotta, 2 tsp. baking powder, orange extract instead of vanilla, whole milk and 2 Tbsp. sugar not three. If you want a more orange flavor use an orange syrup on top or add extra zest or orange extract. I think the flavor was buttery and you could taste the orange but not so overpowering that it would be strange with maple syrup. I let the batter sit for a few minutes on the counter, let it get air, then use a 1\/4 cup measuring cup or a large cookie scoop in a lightly buttered or spray skillet. These take longer to cook and the batter remains quite wet on top when it's ready to flip, so be careful not to splatter wet batter when flipping. They are done when the internal temperature reaches 160\u00b0. Really good. So good!! I I used 2 T sugar and 1\/2 C whole wheat flour + 1 C white flour. I also used whole milk and whole ricotta and left out the orange zest to make it a little easier and these are sooo yummy! I ate them plain or with fresh squeezed orange juice on top. The BEST pancakes I've EVER made. They were light, fluffy and melt-in-your-mouth heaven!
