The frosting tasted good, but was too thick, so I added 1 Tbsp milk to it. The flavor was good. I will try these again, and try a bread flour to see if they raise better for a lighter texture. They were light and very tasty. But, I'm not sure mine turned out quite right. I'm not an experienced cinnamon roll baker, so I'm not sure where I might have erred (if I did). I doubled the recipe using 6 cups of flour. The dough was extremely sticky. I kneaded in more and more and more flour until the dough was the consistency I thought it should be. Perhaps I used too much flour? The dough never rose (let set for several hours). Baked them anyways and, as I said, they were very tasty. However, I can't say that I will make them again. Took a batch of these to my neighborhood police station. The coppers loved them. One officer wanted me to bake some for his family for Christmas. Another said they were better than Cinnabons. (Of course they were!) Easy to work with. I always knead by hand, not by machine. It's my therapy. Next time, I'd add just a little more liquid to the frosting. Was looking through old issues when I came across these and had to make them. They are hands down the lightest cinnamon rolls I have ever made. My new all time favourite. I used my mixer to do my kneading and had to add one or two tablespoons more flour so it was not so sticky but the results still came our light and delicious. My new go to cinnamon roll recipe from now on. The next day I just microwaved them for 12-15 seconds to make them taste like they were fresh from the oven. I mixed them up, let them rise once then rolled them out and placed them in the refrigerator over night as I wanted them fresh baked for Sunday morning. I let them rise about 1 1\/2 hrs the next day and they were PERFECT! My only problem was while they did rise both times, when I baked them they didn't rise as pictured. I must have done something wrong. These were awesome! I am an avid baker and have had success with many from scratch items but I had never succeeded at cinnamon rolls. After reading the reviews I had my hopes up but due to past failures I was pretty unsure how they would turn out. We had them as desert and they were approved by my kids, husband and of course me, can't eat just one is right! My son said these are the best cinnamon rolls I have ever had.<\/p>
I had to let them rise for about 1 1\/2 hours initially but do to past experiences I was pretty cautious. I used the full 3 1\/2 cups flour and baked them for the full 25 minutes. One of the problems I had with past cinnamon rolls is that they stayed doughy in the middle and that was a fear of mine with these since there were 24 of them in the pan but they were great. I used my Kitchen Aid to do all the mixing and the kneading (I used the dough hook for 7-8 minutes on speed #2.) The process overall took awhile but the actual hands on time was minimum. They were also good reheated the next day. I wanted to love these. I enjoy making cinnamon rolls so I was excited about seeing the recipe on the magazine cover, and I couldn't wait to make them. However, the dough was so STICKY. Even after adding lots of extra flour, greasing my bowls and rolling pin, and using extra flour on the mat I used for rolling. dough was stuck on everything. They baked up pretty (after chilling the dough before cutting because of the stickiness) and they tasted great while warm.
