I made the following adjustments as follows: I used 1/4 cup vegetable shortening & 1/4 cup softened butter or margarine instead of ALL butter (or margarine) as I was low on butter & margarine!I used 1 tsp. salt in the dry ingredients instead of 1/2 tsp. of salt and also 1/2 tsp. ground cinnamon, 1/2 tsp. ground cloves & 1/4 tsp. ground nutmeg with the dry ingredients. I sifted the dry ingredients together, rather than just combine them-I find that for me, the dry ingredients are more evenly distributed that way! I soured 1/2 cup milk with 1 Tbsp. cider vinegar (I've used evaporated m ilk as milk to sour in place of buttermilk OR 2% milk, soured with the vinegar ( 1 Tbsp.). I omitted the nuts and used 1/2 cup mixed candied fruit with 1/8 cup all-purpose flour & I used 2 cups Granny Smith apples, chopped in my food processor & added 1 Tbsp. ground Navel orange for that orange tang! I didn't peel the Granny Smith Apples, I just cut the ends off & cored them! For the topping, I used 1/3 cup all-purpose flour, 2 Tbsp. each packed brown sugar & granulated sugar, the 1/2 tsp. ground cinnamon and the 3 Tbsp. butter OR margarine. I used two 8-1/2x4-1/2" greased and floured loaf pans to bake the bread in and I'd baked the bread 60 to 70 minutes, using a cake tester! I'd made this bread for a friend who is sensitive to sugar-he has alleergies to natural sugar! When I'd baked the bread for Sam, I omitted the 1 cup sugar and used 1/2 cup maple syrup-that is the only type of sweetening my friend can have! For the topping, I'd also omitted the sugars & one time, I'd used 1/4 cup each all-purpose flour & 1/4 cup quick-cooking oats for topping! I still omit the nuts for the most part in a # of the recipes I use for breads/cookies/cakes & try to substitute other items (the candied fruit or raisins, etc.) Thank you, June Formanek, for sharing this recipe! delowenstein
@context":"http://schema.org/","@type":"Rating
{"@context":"http://schema.org/","@type":"Review
2012-11-18
@context":"http://schema.org/","@type":"Person
ChefV
After reading all the rave reviews I was very disappointed in this recipe. I did not care for this bread. I don't think it had enough apples. It tasted on the dry side, and didn't have much taste. I am surprised by the rave reviews.

I added cinnamon and allspice to the batter as I thought it would give the apples a punch. It did! I will also add next time a little cloves. The topping was perfect as I did not want an excessively sweet topping. I made 8 little loaves but found that they were a little crumbly when cut into slices. I may have to add another egg.

Lacked a little something- maybe add cinnamon to the bread portion not just the topping. I also think I would make an additional half batch of the topping to layer among the dough before baking. Overall- good but not great.

This was easy and really good I had a mix of apples from apple picking so I used a few different kinds. It turned out great and I'm going to make this in mini loafs to freeze and give as gifts. After reading all the rave reviews I was very disappointed in this recipe. It is rare I come across a TOH recipe I don't like. Mine had very little taste to it. I think it needs more apples and the topping was not as sweet as I thought it would be. Even hubby didn't care for it. Have to give it 2 stars. :(

II'm updating my review for this recipe as I prepared it again today, 1/1/2014!

The topping made the loaf look gorgeous. I added 1 tsp cinnamon and 1/2 tsp nutmeg. This might have caused the end result to be a bit dry. I'll probably try it again, but maybe increase the buttermilk a little. Very good tasting, though.
