What is the HexClad carving and cutting board?

The HexClad cutting board stood out during my search for a couple of reasons. First, its hybrid design essentially gives you two products (a carving and a cutting board) for the price of one. Second, I liked the ingenious concept of a built-in stainless-steel tray that catches scraps—or juices, depending on which side you’re using.

The HexClad carving and cutting board is made of beechwood, which protects your finest kitchen utensils, such as sharp knife blades. It also looks great as it naturally darkens over time. There’s a handle for easy carry, too, so slinging the board over to the sink for a quick rinse makes for easy cleanup.

How I Tested It

As soon as the HexClad cutting board arrived at my door, I was ready to use it. Between making soups during one of the snowiest winters we’ve had in years and cutting finger foods for my toddler, I use a cutting board multiple times a day.

The board arrived in a classic HexClad drawstring storage bag—and let me tell you, lifting this thing out of the box was no joke. It’s a heavyweight cutting board, more than two inches thick.

Because it looks pretty and is easy to wipe clean, I leave it out on my kitchen island to use throughout the day. I don’t even bother storing it away. Leaving it out also ensures I get compliments from guests, who are always wowed by the dual action board and removable pan.

To put the cutting board to the truest test, I intertwined it with my typical cooking routines. On average, I use the cutting side much more than the carving side to cut veggies, slice bread, prep a sandwich, you name it. I throw anything that requires a prep space (and isn’t raw) on the cutting side. It has essentially become my countertop chef’s block.

My partner (and amateur pitmaster) uses the cutting side for meat more frequently than I do—and he’s already dreaming about cutting his barbecue creations on it this summer. The engraved hexagons on the carving side hold the meat in place so you can make clean cuts. It’s great for things like pork tenderloin or a whole bird out of the oven.

The stainless steel tray takes the board to the next level. On the cutting side, it slides in so it’s flush with the surface, allowing you to scrape onion tops, carrot peels and sandwich crusts to the side without making a mess. On the carving side, the tray flips to slide in just beneath the surface so that meat juices drain into it effortlessly. Slide the tray back out, and you have perfect, contained drippings for gravy. It was so handy while prepping holiday meals last year.

Cleaning

In between uses throughout the day, I simply wipe down the board with a warm, wet rag (assuming there’s no meat on it or potential for cross-contamination).

For a deeper clean, I wash the board with warm water, a little dish soap and a dishrag or soft sponge. Then, I pat it dry. It’s important not to let this board sit in water too long or use harsh cleaning agents on it.

After washing it with soap and water and letting it dry completely, you should season it with food-grade mineral oil. If we’re being perfectly honest, I have yet to do this. However, I do have some mineral oil on the way—stay tuned!

While I’m in love with the hybrid design of the cutting board that makes it suitable for almost every kitchen cutting and prep task, I have noticed one drawback in the 2-in-1 design. When using the cutting side, the board twists and slides a bit if there’s not enough pressure applied. That movement is caused by the hexagon grid on the carving side sticking out and creating an uneven surface that pivots against my countertops.

Overall, I’d say the issue is a relatively minor annoyance. It can be remedied by applying more pressure while cutting. Sometimes, I’ll even put a dishtowel against the board to keep it from sliding.
